prepblog: Coconut oil is one of the few oils that does’t go rancid, making it a good choice for long term storage. The linked article explains many of the benefits of coconut oil.  Try to buy your coconut oil in glass jars instead of plastic, and store it in a cool, dark place (basement or root cellar is ideal).
